Here is a recipe that we love. 🙂 It’s called Farm Apple Pan Pie, enjoy!
Egg Yolk Pastry: | Filling: | Icing: |
5 c. sifted flour | 5 lb. tart apples, peeled & sliced | 1 c. confectionery sugar |
4 tsp. sugar | 4 tsp. lemon juice | 1 Tbsp. milk |
1/2 tsp. baking powder | 3/4 c. sugar | |
1/2 tsp. salt | 3/4 c. light brown sugar | |
1 1/2 c. shortening | 1 tsp. cinnamon | |
2 egg yolk | 1/4 tsp. salt | |
cold water | 1/2 tsp. Nutmeg |
- Make Pastry by combining the flour, sugar, salt and baking powder; cut in shortening. Place egg yolks in measuring cup and stir until smooth. Blend into eggs enough cold water to make 1 cup. Sprinkle liquid over dry ingredients gradually. Toss with fork to make soft dough. Divide dough in half. On a lightly floured surface, roll half of dough to fit a 15x10x1-in. baking pan.
- Sprinkle lemon juice on apples. Place half apples on bottom of pastry lined pan. Combine the sugars, cinnamon, nutmeg and salt. Sprinkle half mixture over apples in pan. Spread remaining apples on top and sprinkle on remaining mixture.
- Roll remaining pastry to fit pan. Top with pastry, seal and crimp edges. Brush with milk and sprinkle with sugar. Cut vents or prick with fork.
- Bake in preheated oven at 400 °F for 50 minutes or until crust is golden brown and filling is bubbly. Mix confectionery sugar + 1 Tbsp. milk for icing. When pie has cooled drizzle with icing.
